'Tis the season for hot lattes, pumpkin pie, apple crisp, scenic fall hikes, and curling up under a blanket with a good book. In a word, it's all about comfort. Looking to indulge in the flavors of the season without getting too off track?
Enter this pumpkin spice smoothie. It's creamy, spicy, comforting, and perfectly sweet—and best of all, it's healthy and packed with protein.
Mashed pumpkin combines with smooth and silky coconut milk to form the base. Then, bananas and stevia are added for natural sweetness, then blended up with a warm and spicy blend of cinnamon, nutmeg, ginger, cloves, and allspice (we used pumpkin pie spice, a premixed blend of these spices, to make things easy). Last but not least, vanilla protein powder is mixed in for added protein that will keep you full.
Try whipping up a tall glass of this drink to enjoy for a quick breakfast before work or after a workout to refuel. It's one of our personal favorites here at Webb. Enjoy and let us know if you give it a try!
Pumpkin Pie Smoothie (serves 2)
2 cups coconut milk
2 ripe bananas
1/4 cup canned pumpkin
1 scoop vanilla protein powder
1 teaspoon pumpkin pie spice
1 teaspoon cinnamon
2-3 pinches stevia (we used Whole Foods powdered stevia)
4-5 ice cubes
Combine all ingredients in a blender and blend until smooth. Pour into 2 glasses and enjoy!
Notes: Be sure to use a vanilla protein powder that you like. The vanilla flavoring lends some sweetness to the smoothie. The amount of stevia you add can be adjusted to taste. Don't like coconut milk? Feel free to substitute almond milk, cashew milk, or your favorite milk. Canned coconut milk is also great and nice and creamy.
